Why You'll Love This Recipe

  • Egg-free and family-friendly

  • Perfect for using overripe bananas

  • Moist and flavorful

  • Easy to make with simple ingredients

  • Can be baked as a loaf or muffins

  • Great for breakfast, snacks, or dessert

Ingredients

  • 3 overripe bananas, mashed

  • 2 ripe bananas, mashed

  • 2 cups all-purpose flour

  • 1 cup brown sugar

  • 1 cup granulated sugar

  • 2 teaspoons baking soda

  • 1 teaspoon baking powder

  • 1 cup salted butter, softened

  • 1 teaspoon vanilla extract

  • 1½ cups applesauce

Instructions

Step 1: Prepare the Oven

Preheat your oven to 350°F (175°C).

Grease a loaf pan or muffin tin with butter or non-stick baking spray.

Step 2: Mash the Bananas

In a large mixing bowl, mash the bananas until mostly smooth.

A few small lumps are perfectly fine and add great texture to the finished bread.

Step 3: Add the Wet Ingredients

Add:

  • Granulated sugar

  • Brown sugar

  • Applesauce

  • Vanilla extract

  • Butter

Mix until combined.

The mixture may still look slightly lumpy, which is completely normal.

Step 4: Combine the Dry Ingredients

In a separate bowl, whisk together:

  • Flour

  • Baking soda

  • Baking powder

Gradually add the dry ingredients to the wet mixture.

Fold gently until just combined.

Avoid overmixing, as this can make the bread dense.

Step 5: Bake

For Banana Bread

Pour the batter into a prepared loaf pan.

Bake for approximately 60 minutes or until a toothpick inserted into the center comes out clean.

For Banana Muffins

Divide batter evenly into a prepared muffin tin.

Bake for approximately 25–30 minutes.

Step 6: Cool & Enjoy

Allow the banana bread to cool completely before slicing.

Serve warm with butter, nut butter, or enjoy as-is.
