Watermelon Mint Frose`

Inspired by Half Baked Harvest, this is such a great drink for the summer heat. The drink is light and refreshing with a hint of alcohol. We recreated this drink on Father’s Day and it was such a hit! Especially with the colors, we definitely will be bringing it back for our 4th of July festivities! It’s a simple 5 ingredient recipe that you can prep from the night before and blend everything at the time of the event in less than 5 mins you'll be ready to go! Watermelon popsicles are optional, but if you have the time they are fun, easy to make and keeps your drink cooler longer as well as very tasty and can be served to kids at family events.
This Recipe makes 3 to 4 glasses.
What you’ll need:

1 bottle Rose (750ms) – We used Stella Rosa

2-3 cups cubed watermelon

2 tablespoons lemon juice
-
2 tablespoons honey/sugar (optional)

4 leaves of mint
-
Sugar for the rim and mint for serving (optional)
Method:

The night before, pour the rose in ice trays and freeze overnight.

In a blender, blend the watermelon, lemon juice, mint, and sugar/honey until smooth. Strain through a fine mesh sieve into a pitcher, Chill until ready to serve.

Spread a little sugar onto a shallow plate. Rim each glass in sugar (optional).

In a blender, combine the frozen rose cubes and about 1 cup of the watermelon mint juice, then blend until slushy. Add additional rose or watermelon to thin if desired.

Pour into your prepared glasses. Add popsicles and serve!
Watermelon Mint Popsicles
If making popsicles, use 6 cups watermelon, ¼ cup lemon juice, 2 tbs mint, 3 tablespoons honey/sugar (optional). Add ingredients to a blender and until smooth. Strain through a fine mesh sieve into a pitcher. Pour the mixture among 4-6 popsicles molds or dixie cups. Reserve one cup watermelon mint juice. Freeze overnight, chill the reserved watermelon mint juice to use for blending with rose cubes. Enjoy!
